Sprout Veggie Toast




Sprouts are a great source of proteins and  can be eaten in different ways, in salads , chats and curry too.... this is another tasty way of including sprouts in our food esp. kids lunches or tiffins... who are often fussy while eating or are picky eaters too.. i hope this recipe helps all moms to be free from the long lunch hassles and have their kids enjoying thier meals. we generally have sprouts at our home so this recipe can be made in a jiffy. And if we combine with a slice of  whole grain bread , its sure a wholesome lunch for our kids who are on the go always....

Ingredients

1.   1/2 cup green moong sprouts
2.   3 tbspoon water
3.   1/4 tspoon salt or acc to your taste
4.   1/4 tspoon black pepper or acc to your taste
5.   1/2 tomato diced in small pieces
6.   1/4 piece green bell pepper diced in small pieces ( you can use red or yellow peppers too )
7.   2 baby carrots diced in small pieces
8.   1 tbsp coriander leaves
9.    3 whole grain bread slices

Method

1.   Grind the moong sprouts by adding one tbspoon water at a time till it becomes a paste consistency.

2.    Add all the diced veggies and salt and pepper and coriander leaves and mix well. ( You can add more veggies of your kids choice ).

3.  Heat the tawa/pan/ griddle on medium heat and add a little butter or ghee.

4.  Apply the paste on one side of the bread slice evenly and put it on the heated tawa with the sprout mix side down, press gently with your spatula and allow it to be crisp and light brown ( it will take around 45-50 seconds ) and then flip it over and other slice of bread just plain with little ghee.

5.  Your sprouts veggie toast is ready, you can cut it in any of your kids favourtie shape and pack it in the lunch box, with few pieces of seedless orange and  a cup of yoghurt or a box of milk or a cheese stick to complete his food pyramid at lunch.

This sprouts veggie toast even tastes good after like 4-5 hours , so i am sure kids will enjoy it at lunch time at school, and when kids are happy it will make moms happy too.

Notes : Soak Green moong beans overnight, and next morning strain the water and put them in an airtight container for one whole day and your bean sprouts are ready.

Meethi Thuli ( Sweet Dalia) , Rice and Kadhi ( Durga Ashthami Prasad)




Meethi Thuli ( Sweet dalia or broken wheat)

Ingredients :
  1. 1 cup Broken wheat or Dalia 
  2. 1 cup jaggery pieces 
  3. 3 cups of water 
Method :

  1. Put 1 cup jaggery in a little water and bring to a boil so that jaggery  dissolves in the water to make jaggery syrup.
  2. Wash the Dalia with water and put 2 cups of water and 1 cup of jaggery syrup.
  3. Mix well and put in a pressure cooker and cook until 3 whistles.

Rice :

  1. 1 cup rice
  2. 2 cups water

Method :

  1. Wash rice and add  2 cups of water and cook in the pressure cooker for 3 whistles, or u can cook the way u generally make plain white rice.

Marwari Kadhi 


Ingredients :

  1. 2 cups of curd
  2. 1/4 cup besan or gram flour
  3. 1 and 1/4 cup water
  4. 1 tspoon salt
  5. 1/4 tspoon red chilly powder

For Tadka :

  1. 1 and 1/2 tbspoon ghee
  2. 1/2 tspoon of a mix of mustard seeds, cumin seeds and methi or fenugreek seeds.
  3. 2 green chillies cut into pieces
  4. 4-5 curry leaves
  5. 1/4 tspoon of grated ginger
  6. A pinch of Asafoetida
  7. A pinch of turmeric powder

For garnishing.

2 tb spoons of finely cut coriander leaves


Method :

  1. Beat the curd and add the gram flour to make a smooth paste.
  2. Add all the water to make the paste watery.
  3. Add salt and red chilly powder and mix well.
  4. Meanwhile prepare the tadka.Take a pan and heat the ghee and add the mustard seeds , cumin seeds and methi seeds.
  5. let them sizzle and add green chillies and curry leaves and grated ginger.
  6. Next add the Asafoetida and turmeric powder and stir them for a half a minute until the ginger and chillies are done.
  7. After the tadka is done add the curd, gram flour mixture to the tadka and keep stirring continuously( or the mixture will curdle)  until the kadhi comes to a boil .
  8. Let it boil for another 10- 15 minutes and your Kadhi is done.
  9. Garnish it with coriander leaves.  And serve hot with plain rice with a little ghee and meethi Thuli as ur Asthami prasad along with the blessing of Goddess Durga.

Khandvi or Surali Vadi






This is a recipe of Khandvi known as in Gujarat and Surali Wadi known as in Maharashtra.

 Ingredients:  ( will serve 2-3 persons)

  1. 1 cup besan ( gram flour)
  2. 1 tbspoon maida ( all purpose flour)
  3. 3/4th cup sour buttermilk
  4. 2 cup water
  5. salt acc. to taste
  6. 1/4 tspoon red chilli powder
  7. 1/4 tspoon turmeric powder

For garnishing:

Fresh coconut grated, finely cut coriander leaves.

For Tadka:

  1. 2 tbspoons of oil
  2. 1 tspoon of mustard seeds
  3.  A pinch of asafoedita
  4. 2 green chillies cut in to small pieces.

Method

  1. Mix Besan and Maida with buttermilk and water and add all the spices. Mix little butter milk at a time so that no lumps are formed. Try to make a smooth batter.
  2. Put this mixture in a pan first on high flame and continue stirring it.
  3. Then keep it on low flame and cover it with a lid and let it steam for around 1 minute.
  4. Grease the back side of a big plate or your counter top surface and spread the batter evenly and in a thin layer.
  5. Let it cool a little and cut it horizontally into around 2 inches  and then roll each piece to make khandvi rolls. 
  6. After making all the rolls put them in a big bowl and prepare the tadka with the above ingredients and put green chillies in it.. let them sizzle and put the tadka on the khandvis.
  7. Last but not the least garnish it with freshly grated coconut and finely cut coriander leaves.

Moong dal kachori recipe


Quick and Sweet Halwa

This is a quick halwa that can be prepared in minutes when you have a desire to eat something sweet. Here is the recipe :

Ingredients ( this recipe will make for 4-5 people)

  1. 1 cup whole wheat flour
  2. 1 table spoon sooji ( to give halwa the coarse wheat flour feeling)
  3. 1 cup sugar
  4. 1/2 cup ghee
  5. 1 glass of hot water
  6. 1 tspoon of elaichi powder


Method

  1. Heat a nonstick pan on medium heat and pour ghee in it .
  2. Add the wheat flour along with sooji and keep roasting it. ( if roasting is not that easy u can add 1 table spoon more ghee. )
  3. Roast till the flour is of brown color and u will feel the aroma. (  stir it  continuously otherwise it will burn )
  4. Then add the hot water slowly , stir it carefully.
  5. After the water is absorbed , add the sugar.
  6. Let the sugar get absorbed, the halwa will start leaving the pan sides and u will see halwa leaving the ghee.
  7. Just add a little elaichi powder and its ready to eat.

Note: If u replace 1 cup of sugar with 1 cup of cut jaggery pieces , it will have a different taste. You can even make One glass of water with 1 cup of jaggery pieces and add the jaggery syrup directly instead of water and jaggery separately. I personally love the jaggery version of this halwa.
